Sunhari Jacob is a second year student at the University of Minnesota pursuing a Bachelor’s degree in Chemical Engineering, with a passion for engineering sustainable solutions with roles in the UMN Solar Vehicle Project and the American Institute of Chemical Engineers. She has previously worked with the Office of Sustainability in launching the first campus-wide energy conservation competition in April 2025, recording a roughly 17% decrease in energy use from the last year in the winning residential hall.  In her new post, she is excited to contribute towards a campus culture that prioritizes sustainability, by engaging the student body with the Office of Sustainability's mission and the Climate Action Plan.

Outside of work, Sunhari enjoys trying out new foods on her Instagram food blog, TwinCitiesLocals, and exploring the Twin Cities. She also loves to read, work out, and spend as much time as she can with her closest friends.
